Bountiful Carrot Cookies
Preheat oven 400º F
1/3 cup each of oil, honey, molasses
1 egg
1 cup unbleached flour
1/2 teaspoon each baking powder and baking soda
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 teaspoon salt
1/4 cup non-fat dry milk
1 cup (raw) grated carrots
1/2 cup diced (small cubes) dried fruit such as pineapples, apricots, raisins, etc.
1-1/4 cup quick cooking rolled oats
In a large bowl, beat oil, honey, molasses and egg until well mixed. In another bowl, sift flour, baking powder, baking soda, nutmeg, cinnamon, salt and dry milk.
Stir into oil mixture. Add carrots, dried fruit, and oats. Mix well. Drop by heaping teaspoons onto a parchmant lined cookie sheet.
Bake for about 9 to 9-1/2 minutes.
Let cool on wire rack.
