Couscous and Fruit Salad
Ingredients you will need:
Couscous
Vanilla, low-fat yogurt
Honey
1 lime
Fresh or canned (in their own juice) pineapple, mango and papaya cubes or any tropical fruits. Kiwi slices are also good in this salad.
Fresh strawberries
Pecans
Boil 1½ cups of water in medium saucepan. Remove from heat. Add 1 cup of couscous to the water, stir, and cover for 5 minutes. Fluff couscous with fork and let sit for 20 minutes to cool down. In the meantime, in small bowl, mix together 1 cup of vanilla low-fat yogurt with 1 tablespoon honey, 1 tablespoon grated lime peel, and 1 tablespoon of lime juice from the lime. Grate lime first before juicing.
When the couscous is cooled, add the yogurt dressing, ½-cup of pineapple chunks, ½-cup mango cubes, and ½- cup of papaya cubes to the couscous. Mix gently. Place this onto a serving platter, or scoop onto individual serving plates and serve with strawberry slices. Sprinkle the top with chopped pecans.
