This recipe is easy and quick to make and is easy on the budget. It is even better when cooked the day before it is eaten.
Lentil Soup-Italian Style
Serves 4
3 Tablespoons olive oil
1/2 cup chopped onions
2-3 cloves garlic-minced
2 stalks celery sliced
1 cup sliced carrots
2 cups potatoes-cut into 1 inch cubes
1 cup dried lentils
6 cups chicken stock
1/2 teaspoon dried basil
1 small bay leaf
salt and pepper
1. Heat oil in large pan. Add onions, garlic, celery, and carrots. Sauté for 2 minutes, add 1/2 teaspoon salt and continue to sauté for 3 more minutes or until the onions are translucent. (Do not brown this mixture)
2. Add potatoes, lentils, chick stock, dried basil, bay leaf and a good grinding of black pepper.
3. Bring to a boil and cook for 25-30 minutes or until the lentil are soft and potatoes are cooked.
Remove bay leaf and serve with a hearty Italian bread.
