Mimosa Cupcakes

I had a box of white cake mix and wanted to flavor it.  I looked through the numerous flavoring I have on hand and decided on using champagne and orange.  I made the batter orange flavor by adding 2 teaspoons of orange flavoring (I tinted the batter orange with food coloring) and made buttercream frosting by adding a teaspoon of champagne flavoring to it-

For the cupcakes-Follow the instruction on back of box.  Add orange flavoring and food coloring to batter.

Champagne Flavored Buttercream Frosting

1/2 cup good quality vegetable shortening
1/2 cup unsalted butter, softened
1 teaspoons vanilla extract
1 teaspoon champagne flavoring
4 cups of sifted confectioners’ sugar
2 or more tablespoons heavy cream

Note: Scrape down sides of bowl often.

Sift your four cups of confectioners’ sugar in to a large bowl and set aside.
Cream shortening and butter in a large mixing bowl with an electric mixer on medium speed.
Add vanilla and champagne flavoring to butter and shortening mixture and beat well on medium speed.
Stop mixer and add sifted confectioner’s sugar a cup at a time. Beat on low speed (otherwise you will have sugar all over the place) until sugar is incorporated into the butter mixture then turn mixer to medium speed and beat for about 30 seconds. Keep doing this until you have used all of the confectioner’s sugar. Mixture will be dry.
Add cream, 1 tablespoon at a time, until you get a medium consistency.
Keep beating until light and fluffy for 5 or more minutes again, scraping down sides of bowl often.

They were delicious!

  1. Hi Liz, the cupcakes looks and sound so good! I have been busy helping Emily get some things done for her college graduaton and along with some family we are having a celebration luncheon for her the day after on the 19th. We have all her announcments and the luncheon invitations done and sent out. Now we can relax a bit. She graduates on the 18th. I am so proud of her for her accomplishment. I continue to get better each day. I know the nicer weather and getting out has helped a lot. Today is Preton’s 3rd birthday and we are taking him and family out for Pizza this evening. Hope you are not getting to much rain. Those days are so gloomy and always make me droopy Sending lots of love and ~hugs~


  2. Hi Liz: I lovr buttercream frosting, but can’t have it anymore due to the shortening and butter. I used to make it as a teen.
    I did love that Moo Moo Gai Pan. There’s a Chinese restaurant in Calais, but they use MSG and I don’t want that! Have a great day. HUGS
