I made wheat bread today but it came out too dense and heavy and didn’t rise well even though I used vital wheat gluten. My yeast was ok.-doesn’t expire until 2010. My bread flour was the culprit of my failed attempt. I know this because I made cheese bread the other day using the same bread flour and they also came out too dense and heavy and didn’t rise too well. I use a lot of all-purpose flour and very little bread flour. I don’t know when the last time it was that I used the bread flour. I store it in a large plastic container and didn’t have the sack to check on the expiration date. Oh, well. Live and learn as they say.
