Some of the foods for our picnic in the park the other day. We had rice salad, corn salad, (check out this black bean and corn salad recipe from Connie that she left for me in a comment. Thank you Connie.) chicken strips, and honey barbecue chicken wings. For dessert, Carrie brought some chocolate éclairs.

After the picnic, Carrie and Nicky had to leave.  It was Carrie’s day off from work, but they tracked her down and called her in to work.

After Carrie and Nicky left, Tom, Brian and I went to St. Marys and got Brian an ice cream then we walked along the town.  It was a beautiful day that day.  The temps were cooler than usual.  It was such a pleasant day.

  2. Hi Liz: Oh your picnic sounds like such fun. St. Mary’s is lovely. Is the water a river or the ocean? How pretty. Looks a bit like Maine. I’m glad you liked the recipe. I have another summer fave too.

    BARLEY-PEA-MINT SALAD

    1 c medium barley cooked
    1 pk. frozen peas
    1 diced red onion
    2 diced celery stalks
    1 pk. frozen corn (approx. 1 1/2 c.) {I also use 1 can unsalted corn} {I rarely have frozen corn!}

    Mix all above in bowl.

    ADD:

    1/2 c. olive oil
    3 tbs. red wine vinegar
    1/4 c. fresh mint
    freshly ground pepper

    Toss with the barley mixture.

    ADD:

    2 diced tomatoes

    Chill or serve at room temperature.
