These were so good and very easy to make.
I adapted these Pepperoni Pizza Puffs recipe by Lick The Bowl Clean who adapted the recipe by Everyday with Racheal Ray. I wasn’t too impressed with Racheal Ray’s recipe. Luckily I saw the recipe and the results at Lick The Bowl Clean first. Otherwise, I would not have given them a second thought.
Pepperoni Pizza Puffs
1 cup Bisquick
1 teaspoon dried oregano
1 teaspoon dried basil
¼ teaspoon salt
¼- ½ teaspoon red pepper flakes
1 cup of whole milk
1 egg, lightly beaten
1 cup shredded/grated mozzarella cheese
¼ cup grated Parmigiano-Reggiano cheese (Parmesan cheese)
½ cup pepperoni diced into small cubes
Preheat the oven to 375°. With cooking spray, spray a 24-cup mini-muffin pan.
In a large bowl, whisk together the Bisquick, oregano, basil, salt and pepper flakes, whisk in the milk and egg. Stir in the mozzarella, Parmigiano-Reggiano and pepperoni.
Divide among the mini-muffin cups (I used a tablespoon size scoop).
Bake until puffed and golden, 20 to 25 minutes.
Serve with warm pizza sauce if desired.
