Using my Pizzelle Iron, I made homemade ice cream sandwiches for my three grandchildren.

Ice Cream Sandwiches
1 ¼ cups all-purpose flour
¼ cup plus 2 tablespoons unsweetened cocoa powder
1 ½ teaspoons baking powder
¼ teaspoon salt
1 cup brown or white sugar
1 ½ cup shortening
½ teaspoon vanilla extract
3 large eggs
1 tablespoons milk
- In a medium-sized mixing bowl, cream the shortening and brown sugar. Beat in the eggs, one at a time, milk, then the vanilla extract.
- In a small bowl, stir the cocoa, flour, baking powder, and salt. Gradually add to the shortening mixture. Beat until well combined.
- Preheat pizzelle iron. Using a scoop (4 teaspoon size) drop batter into center of pizzelle iron. Close cover and cook between 30-45 seconds. Remove cookie from the iron, cool on a rack. Repeat with remaining batter.
(makes about 20 pizzelles-10 sandwiches)
After the chocolate pizzelles were cooked,
I made vanilla ice cream using the Ben and Jerry recipe from this book-
I assembled the sandwiches by placing a large scoop of ice cream onto a cookie and covering that with another. Press down lightly. Wrap in wax paper, place in freezer and let the ice cream set/harden before eating.
