Apple Gallette

For the 4th of July, instead of apple pie, I made a butter crust apple gallette and homemade chocolate chip ice cream.

If making pies intimidate you,  look no further than the gallette.  A gallette is a free-form pie.  It is so easy to make.  It doesn’t have to look perfect but tastes delicious.  It’s appeal is that it is rustic looking.

3 cups thinly sliced, peeled Granny Smith apples
1/2 cup sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
Dash ground nutmeg
Basic Butter Crust-recipe below
1 tablespoon butter

Place apples in a bowl.

In a small bowl; combine sugar, flour, cinnamon, and nutmeg.  Add sugar mixture to the apples, toss to coat apples.  Set aside while you make the butter crust.

Basic Butter Crust

(Preheat oven 400°)

1 ¼ cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon sugar
1 sticks chilled unsalted butter, cut into pieces
1/4 cup ice water

In the bowl of a food processor, add the flour, salt, and sugar; process for a few seconds to combine.  Add the butter; pulse until the mixture resembles coarse meal, about 10 seconds.  With the machine running, add the ice water a tablespoonful at a time through the feed tube, just until the dough holds together-about 30 seconds.

Turn dough out onto a floured counter or board, gather it and press it together forming a disc shape.  Handling as little as possible, roll dough out to approximately 10-inches by 1/8-inch thick.  Transfer rounds to a large parchment-lined baking sheets.  Place the apples to the center of the crust, spread out the apple leaving a 1-inch border.  Dot the apples with the 1 tablespoon butter.  Fold edges over apples leaving an opening in the middle.

Bake in a preheated, 400° oven for 30-35 minutes or until golden brown.
