A Baker’s Joy

After the pumpkin pie was eaten, I promised Brian that he could bake.  Yesterday, I we both decided that he should bake a Victoria Cream Cake.

Although this recipe only calls for one layer and since there is only the three of us, it is big enough for just us. It is filled with (homemade) whipped cream and raspberry.

Victoria Cream Cake

While the baking was happening, I tended to my homemade turkey soup.

As they say, “Waste not, want not.”

Homemade Turkey Soup

Below is the recipe we used for the Victoria Cream Cake. It was slightly adapted from this recipe (Victoria Sponge Cake) which calls for marzipan for the filling-which is probably good too.

Victoria Cream Cake

1/2 cup unsalted butter-softened
1/2 cup plus 1 teaspoon sugar (about 4 ounces)
2 eggs
1/2 teaspoon vanilla extract
scant 1/8 teaspoon salt
1 cup minus 1 tablespoon self-rising flour (about 4 ounces), sifted
1 pint heavy cream
3 tablespoons sugar
1/2 teaspoons vanilla extract
1 cup raspberry jam, preserves or filling

Preheat the oven to 350 degrees F. With shortening, grease and flour a 9-inch round cake pan and line the bottom with parchment paper.

In a standing mixer fitted with a paddle attachment (or using a hand mixer), cream the butter until light and fluffy. Add the sugar and cream well. Add the eggs, vanilla, and salt and continue to mix well, scraping down the bowl with a rubber spatula occasionally. Fold in the sifted flour and pour the batter into the Prepared cake pan. Bake until golden brown and firm to the touch in the center, about 25 minutes. Cool the cake in the pan on a rack. Unmold and, using a serrated knife, slice the cake in half horizontally into 2 layers.

In a mixing bowl; beat cream, sugar and vanilla until somewhat firm about 3-4 minutes.

Fill half layer with the raspberry and on top of that spread the whipped cream. Top this with the other layer and dust with confectioners sugar.

I have added my turkey soup recipe to my recipe pages here on this blog. For years I have been wanting to write it down,but was too lazy I guess. When I make turkey soup, I just throw all the ingredients into a pot. Finally, I took note of what I was doing and wrote it down.
