Chewy, Gooey, Chocolaty Brownies

  • 1 cup (2 sticks) unsalted butter (not margarine)
  • 3 Squares (1 ounce each) unsweetened chocolate
  • 2 Squares (1 ounce each) semisweet or bittersweet chocolate
  • 1½ cups sifted flour all-purpose flour
  • 1 teaspoon salt
  • 1 cup finely chopped walnuts
  • 4 large eggs
  • 2 cups granulated sugar
  • 1 Tablespoon vanilla
  • 3 ounces mini semisweet chocolate chips (½ cup)
  1. Preheat the oven to 325°F and spray with cooking spray 13x9x2 -inch baking pan.  In a small saucepan, melt the butter with the two types of chocolate squares over low heat, then cool.  Sift flour and salt into a small bowl or piece of waxed paper, then toss with the walnuts.
  2. In a large bowl, with an electric mixer on high, beat the egg until frothy.  Add the sugar, then the cooled chocolate mixture and the vanilla, beating just until blended.
  3. Using a wooden spoon, stir in the flour mixture just until it disappears, (don’t over mix and don’t use the mixer-stir by hand) then fold in the chocolate chips.  Spoon the batter into the pan and bake for 30-35 minutes or just until a toothpick inserted in the center comes out almost clean.  (Do not over bake).
  4. Let the brownies cool in the pan on a rack for 15 minutes then cut into, the size your desire, squares.  After I cool the brownies in the pan I invert them onto a cutting board and cut them on the board.  I find it easier than scraping a knife in the pan and possibly leaving marks in the pan or dulling your knife.  Place cut squares back onto rack to cool.  Store in an airtight container.
